Question about the plates

I started experimenting on plates this year and just a quick question .Why are plates turned other way from the trunk (outside in) in contrast to bowls (inside out)?

I split my bowl and plate blanks radially.

As Rick says if I have large enough wood, if not, blank the plate with the inside facing the bark, wood cups as it dries and you want the plate to cup that way or else you can sometimes have a useless plate. Wood cups to the bark side as it dries.
