Mould markings on green wood

Hi, I have just been carving a bowl from some green sycamore that was felled about 3 weeks ago.

However I am finding some mould stains within the wood. These appear to have penetrated deeply through the end grain, while the log was in the garden.

Does anyone have any advice on how to avoid this? Is the only solution to use the wood very soon after it is felled.

You can't avoid spalting. I reckon sycamore bad for this. Mind you, it does not seem to make much difference in the end.
